Deer Processing At Gautreaux's Fresh Meat and Grocery, LLC, we take great pride in processing wild game deer for you, just the way you want it. However, due to LDWF regulations, please be prepared to provide proper LDWF License and Deer Tags. Any deer harvested out side of Louisiana must be accompanied by Game Possession Tags, which can be located in each year's Louisiana Hunting Regulations Booklet. Any deer (or deer portion) lacking either of these two documents WILL be turned away. Deer tags kept on site with your deer will be returned to you when you pickup your finished product. Sausage Making "Green" Sausage from your taken deer is one of our many specialties. Sausage is a very versatile way to have your deer processed. It can be used in Gumbos, gravies, or barbecued. The possibilites are endless. Smoked Sausage Just as versatile as "Green" Sausage with that great smokehouse flavor. Spices up your Gumbos, gravies, and is still awesome on the pit. $2.29/lb finished product* Seasoned Grind Simply our famous sausage, un-stuffed, so that you can make chili, meatloaf, hamburger patties, or whatever your heart desires. Un-seasoned Grind Deer and pork in what ever ratio you like, without any seasoning. "Cut the Buck" Some folks just want to have their deer cut into steaks, chops, etc. We can do that too! *"Finished Product" means that the price of processing your deer is based upon the weight of the finished sausage/grind. This price includes the cost of pork, casing, and seasoning used in its preperation. For Example: You bring in 40 pounds of deer meat to be made into sausage at a 60/40 ratio (Pork/Deer). Your total would be $179.00. **Extra charges will be assessed for de-boning your deer carcass and for wrapping the finished product. This charge is assessed at $0.50/lb of the deer carcass for de-boning, $0.20/lb for wrapping (freezer paper) or $0.50/lb for vacuum packing. De-boning is a skilled and time consuming task, and we make every effort to obtain as much meat from the carcass as possible. We DO NOT require that you de-bone your deer before you bring it to us. You are 'free' to do so, but we will de-bone it for you. :-) |
